Puffy Tacos: a San Antonio “Invention”

Puffy tacos are a popular Tex-Mex dish that has its roots in San Antonio. These tacos are known for their unique preparation method, which involves deep-frying the tortilla to create a light and airy, “puffy” texture. The result is a crispy yet tender shell that can be filled with various ingredients. The most common fillings are either picadillo (seasoned ground beef with potato, bell peppers and onions chunks) or shredded seasoned chicken topped with lettuce, tomato, cheese and sometimes guacamole. History

The origin of puffy tacos is often attributed to Henry Lopez, owner of Henry’s Puffy Tacos. Henry is often credited with inventing the puffy taco in the 1970s. However, deeper history suggests that Henry learned his technique from Maria Rodriguez Lopez, owner of Ray’s Drive Inn, which was producing this product as early as the 1930’s. It should also be noted that well-known Barrios family, owners Los Barrios Restaurants, claims that their mother, Viola Barrios, “perfected the puffy taco.”
